Best refreshing summer soup - okroshka
Have you ever heard of Okroshka?
It's a delicious, cold Russian soup that is sure to become a staple in your recipe book. It's healthy, incredibly easy to make and can be customized to your liking.
The base of okroshka is basically a salad.
When ready to serve, the salad is transferred into bowls, and at this point, the liquid of choice is added to the servings.
Ingredients:
The base “salad”:
- 3 tbsp chopped fresh dill
- 1/2 cup green onion or chives, finely chopped
- 1/2 lb ham, diced (you can also replace it with cooked chicken or beef, or use more eggs instead of meat)
- 3-4 medium cooked potatoes, peeled and diced
- 3 hard-boiled eggs, diced
- 3-4 cucumbers, diced
- 5-6 radishes, diced
Liquid (8 cups, cold):
Usually Okroshka is made with Kvass - a fermented fizzy beverage made from eye bread, or kefir - a fermented milk drink, cultured from kefir grains. You can also use buttermilk, tan, ayran, kombucha or just use cold water with sour cream (1/3 cup).
How to make it?
- To prepare the ingredients for okroshka, boil the potatoes whole with the skin on, make hardboiled eggs. Let everything cool completely.
- Peel the potatoes and eggs.
- Cut potatoes into small cubes, dice eggs, cucumbers, ham, radishes, chop dill and green onions. Mix everything in a large pot.
- (to make soup even cooler you can place this the bowl into the refrigerator to chill for about 30 minutes).
- Add the liquid of your choice to this bowl, stir to combine and salt to taste.
