Perfect butternut squash soup recipe

One of the best things about fall is the abundance of seasonal produce. Squash, pumpkins, and apples are just a few of the delicious fall ingredients that can be used to make a hearty soup.

This fall recipe is sure to please even the pickiest of eaters.

To make this soup, you will need: 

  • 1 butternut squash
  • 1 pumpkin
  • 3 apples
  • 1 onion
  • 2 cloves of garlic
  • 1 tbsp olive oil
  • salt and pepper to taste
  1. Peel and chop the butternut squash, pumpkin, and apples into small pieces
  2. Finely chop the onion and garlic
  3. Heat the olive oil in a large pot over medium heat and add the chopped vegetables. Cook until the vegetables are soft and then season with salt and pepper to taste. 
  4. Add 6 cups of water or vegetable broth and bring to a boil. Let the soup simmer for at least 30 minutes before serving.
